FREEDOM Catalonia Sparking NV
The winery producing FREEDOM is located in Catalonia. It turns out they held a referendum in 2017, and in commemoration, the winery specially crafted this FREEDOM sparkling wine. The owner also took note of the situation in Hong Kong. After communication, the owner decided to specially print "Hong Kong Add Oil" and the Catalonia flag on the back label of our wine bottles, letting the people of Hong Kong know that we are not alone.
The original first batch of FREEDOM was a CAVA sparkling wine. However, after the winery produced the first batch of FREEDOM, they received notice from the Spanish Ministry of Agriculture that they were not allowed to use CAVA (Spanish sparkling wine) to produce FREEDOM anymore. But like us, the winery felt that this wine was very meaningful and couldn't allow it to stop production. After lengthy negotiations, the winery decided to replace it with another sparkling wine produced in Catalonia on par with Cava quality and also made from Parellada, Macabeo, and Xarel-lo grapes. Therefore, FREEDOM can finally be properly named "Catalan Freedom Sparkling NV" .
