FREEDOM Catalonia Sparking NV (HK Edition Memorable)
The winery producing FREEDOM is located in Catalonia. It turns out they held a referendum in 2017, and in commemoration, the winery specially crafted this FREEDOM sparkling wine. The owner also took note of the situation in Hong Kong. After communication, the owner decided to specially print "Hong Kong Add Oil" and the Catalonia flag on the back label of our wine bottles, letting the people of Hong Kong know that we are not alone.
The original first batch of FREEDOM was a CAVA sparkling wine. However, after the winery produced the first batch of FREEDOM, they received notice from the Spanish Ministry of Agriculture that they were not allowed to use CAVA (Spanish sparkling wine) to produce FREEDOM anymore. But like us, the winery felt that this wine was very meaningful and couldn't allow it to stop production. After lengthy negotiations, the winery decided to replace it with another sparkling wine produced in Catalonia on par with Cava quality and also made from Parellada, Macabeo, and Xarel-lo grapes. Therefore, FREEDOM can finally be properly named "Catalan Freedom Sparkling NV"

FREEDOM Bordeaux Superieur 2019(HK Edition Memorable)
A red wine specially crafted by a French winery in Bordeaux to commemorate Hong Kong in 2019. It was a heartbreaking year for Hongkongers, and not just for them, many international friends have been closely following Hong Kong's situation. Julien Bonneau, the owner and winemaker of a winery on the right bank of Bordeaux,France, often travels to Hong Kong due to trade relations. He deeply felt the experiences of Hong Kong in 2019. When he learned that we encountered FREEDOM sparkling wine in Catalonia, he felt that this FREEDOM wine was very meaningful, as it was specially crafted to commemorate Catalonia's referendum. "Why not make one for Hongkongers?" This thought led Julien to personally select grapes and barrels, crafting this FREEDOM red wine to commemorate Hong Kong in 2019. Because of this shared vision, wineries from different countries and regions are connected, creating this "FREEDOM Collection" .
This red wine began with grape harvesting in autumn 2019 and has now been completed in 2021


. Because it must be made from grapes harvested in 2019 to bear the vintage year "2019" on the bottle, FREEDOM Red Wine 2019 will forever be limited to 2000 cases.
The vintage is a mark of history. In an age where history can be arbitrarily altered, we must never forget everything that happened in 2019. While the environment may become darker and the sense of powerlessness may grow, at least we must properly record the pain of our city. Hopefully, when the day comes, and our next generation asks about the story of this wine, we can tell them the truth
